You will not see newly added fields unless you refresh your automation. Here's how to reproduce the issue:
  1. Create a Google Sheet with Headers
  2. Configure your automation to add data to those fields
  3. Add more fields to the Google Sheet
  4. Try to add data to the newly added fields using Update Row.
You won't see the new fields. Instead, you have to refresh the entire automation page and then go back to that step to see the newly added fields.
